The Christian Classics Ethereal Library from Wheaton. This is where you can find all 38 volumes of the Early Church Fathers, plus tons of other documents from throughout Church History.
www.reformed.org has a great collection of historic church documents, especially during the reformation. I used them extensively.
New Advent is a helpful Catholic website. My favorite part is the Catholic Encyclopedia.
